Moose Sausage from Previously Frozen Moose Meat

If you use previous frozen moose meat to make sausage can you refreeze it and how long?





We have used previously frozen moose meat to make moose sausage on several occasions. When you refer to previously frozen... do you mean you got the moose this year and froze the moose meat. Or is this moose meat from last year or the year before?

The quality of any moose sausage will be determined by the quality of meat you start with. You know the saying... garbage in - garbage out!

I guess how long you freeze it afterwards depends on how you make your sausage.

If you are making fresh sausage mixed with pork, I wouldn't keep it much more than a year.

On the other hand, if you smoke your sausage it will keep much longer, maybe even a couple of years. But hopefully you don't have to wait that long between harvesting moose.

Remove the Freezer Burn from Previously Frozen Moose Meat

If the moose meat is only one year old then sure, go ahead and make some sausage from it. We have made sausage from moose meat as old as two years without any issue.

Another option for previously frozen moose meat, especially with leftover roasts and steaks is to trim off any freezer burn then grind the whole works and package it up as moose mince (hamburger).

YOU SHOULD OR WOULD WANT TO REMOVE ALL FREEZER BURNED PORTIONS BEFORE MAKING YOUR SAUSAGE TOO!

It doesn't hurt to freeze and thaw meat even a couple of times as long as the meat doesn't get "warm".
