Homer's Wild Game Stuffed Mushrooms

- 1 lb. ground game
- 1/4lb. of your favourite sausage
- 1 cup chopped onion (sweet)
- 1lb. large mushroom caps (Portobello)
- 1/2 cup water
- 1/2 cup uncooked instant rice
- 3\4 cup mayonnaise
- 1\2 cup mozzarella cheese
- 1\2 cup bread crumbs
- Salt, pepper, garlic, and Texas Pete hot sauce to taste
Directions for Wild Game Stuffed Mushrooms
In a skillet, cook ground game and sausage, stir to break up. Add onions when meat starts to brown. Meanwhile remove stems and wash mushrooms. Chop and add stems to meat and onion mixture. When meat is lightly browned, add water and spices, and bring to a boil.
Add instant rice, cover and remove from heat.
Let stand for 5 min.
In a bowl, mix mayonnaise and cheese. Add 1/2 of mayo mix into the meat, add breadcrumbs as well. Mix until all ingredients are blended. Spoon mix into mushroom caps and place filled caps in shallow baking dish. Top with remaining mayonnaise mix.
Bake at 400 for about 15 min, or until golden brown.
Serve with hot sauce or horse radish.
